This coffee was produced by a cooperative of small producers from Riripa village of the Nensebo woreda region of Ethiopia’s greater West Arsi zone.
Cherries are hand harvested and delivered to the Riripa processing station by the 822 small producers forming this cooperative. The cherries are naturally processed and dried on raised beds. Cherries are turned frequently during drying, and are covered during the hottest hours of the day and at night to control the rate of drying.
Naturally processed cherries typically exhibit results in a coffee with a bolder and sweeter flavor profile as the cherry flesh contributes to the coffee's natural sugars. The natural process also results in a lower acidity and a heavier body, making it ideal for coffee lovers who prefer a smooth and rich cup of coffee.

Ideally you should grind as you go. It’s important that your grind is matched to the coffee making process with plunger being very coarse and espresso being very fine.
To preserve all those delicate flavours of freshly roasted beans, store them in either an opaque collapsible air tight container or vacuum sealed bag at room temperature away from direct sunlight.
